The duck legs are confit in duck fat using a specific and strict process to guarantee a meltingly tender texture and the true taste of confit. Duck confit is traditionally served with Sarladaise potatoes, but it can also be used in more original recipes such as a duck confit shepherd’s pie (parmentier), or with a breadcrumb crust, etc.
