It is exclusively made with raw milk from French Montbeliarde or Simmental cows. The visible crystals in the cheese are a sign of successful ripening.If the wheel is surrounded by a brown band, this means that the quality of the cheese is average, while if it is surrounded by a green band, the cheese is of very high quality.
